Nettle cabbage soup – a sparking Russian recipe. Once upon a time, our ancestors, experiencing heavy harsh winters,, as a rule, seriously felt food deficiency by spring. And therefore, the first spring greens were eagerly awaited, because from nettles, dandelion leaves, you could prepare edible, tasty, and importantly, healthy and vitamin dishes. And so reach the summer, while later edible crops appear on the beds. Why nettle? The plant contains many vitamins (A, B1, B2, B3, C, K), as well as calcium, copper and iron. We clarify that this is, first of all, about the nettle of dioecious. The one that grows high and with dark leaves.
We strongly do not recommend collecting nettles in the yards and parks of the metropolis. In this case, the harm from its eating will significantly exceed the benefits. Go for nettles to the village, to the cottage or to the forest. Yes, of course, nettles are burning when collecting. But, firstly, it is not as scary as in childhood. And secondly, you can put on gloves.
For the preparation of dungeons from nettles we need (for 2-3 servings):
Meat broth (1 liter)
Potatoes 2 pieces
Half a small carrot
A bunch of young nettles (two times more than in the photo)
Salt, pepper, bay leaf to taste
Sour cream for serving
Pour nettle with cold water. We clean the vegetables. Cut the potatoes with cubes, carrots with circles or rub on a coarse grater, onions – finely crumble.
Put the broth on fire, bring to a boil. In boiling broth we put vegetables: potatoes, carrots, onions. Cook for a few minutes.
We take out nettles, wash well in running water so that there is no sand or small insects. Chop, like cabbage for cabbage.
